East Midlands brides have a royal baker on their doorstep! Leicestershire's Fiona Cairns was honoured to create the cake for the Royal Wedding of Lady Gabriella Windsor to Mr Thomas Kingston.
The team used three of Fiona Cairns' most delicious recipes to create a delicious eight-tiered masterpiece. The base layers were in rich, classic fruit cake – a recipe much-loved by the bridegroom – with further tiers of Victoria sponge and a Lemon Limoncello sponge cake.
The cake's decoration took the form of a pale blush icing, delicately decorated in shades of cream, white, blush pink and soft green, with subtle highlights of gold. Lady Gabriella was keen to include reference to the delicate lace work of her dress, along with a leaf border around the base of the cake – inspired by the fabrics found within Frogmore House, where the afternoon reception was held.
A selection of seasonal, hand-crafted sugar flowers naturally fall down the cake, including peonies, lilacs, hydrangeas, sweetpeas and philadelphus to match flowers used throughout the day, as well as English roses, specifically the Ella rose, named after the bride. “It's always an honour to be asked to create the most important cake of someone's life, yet even more so when it's a Royal Wedding,” says Fiona.
